A few mentions here for Skiathos and I think it was a lovely place to visit when I went several years back but only if you like short runways and dodgy landings

Skopelos was nice (20 years ago).
But, although not small, Crete is wonderful. Steer clear of the big resorts, and the food is brilliant yet cheap
Head to the east Crete for better landscape/beaches and prices, and then south to Elofonassi for a day.

I also went to Skiathos, although 26 years ago, airport passport control was a corrugated shed, so will have changed? Sounds like your description then. The Abba film Mamma Mia was partly filmed there with Skopelos. The bird will appreciate a trip to Banana beach :-)

We went to Karistos on an island called Evia in July with our daughter and grand kids. You can drive onto it via a bridge an hour or so from Athens. Not touristy or crowded mainly Greeks so prices are very fair. Worth a look

But dont rule out Corfu. Kassiopi on the North coast is a lovely fishing village, been going there about 20 years now. Big pebble beaches but I prefer those, makes the water gin clear and great for snorkelling. Great restaurants and bars line the harbour, something for everyone.

I would recommend Skiathos as it was like you are describing when I went about 28 years ago. It was fantastic. No idea what I like now though.

If you've not been, get yourself over to Skiathos, I'm sure you won't regret it.
I love the Greek Islands and have always had a great time wherever we've been, save for Sissi on Crete around four years ago that was full of Jerries and Russians, who plainly despised each other.
Skiathos however, is just beautiful, and we've been going there for the past three years and will be returning again next July.
Doesn't really matter where you stay, it's only a small island which makes for really quick and easy transfers. If you stay in or around Skaithos Town itself, it would be quicker still and cheaper to either walk, if you've been before and know the way, or get a cab.
Just a beautiful place...

The smaller islands you typically have to sold0. The ferries in Greece are numerous and relatively cheap, but some islands are a mission. Of course they're the ones that are least touristy.
One island that I haven't been to that might float your BOAT is the oddly named GAVDOS, a naturist island and the southern most point of Europe.
